NASCAR

I don't understand the appeal.

The cars don't look fast. They may be horrifically fast, but they just don't look it.

The cars aren't attractive. They're just sort of plain.

Can someone please enlighten me as to why this is such a popular motorsport?

The crashes. More drivers. More accessible in the US. The cars are cars you can own and drive.

Except the cars are just fiberglass shells over a heavily engineered core, that is nothing like street cars.

Yes, but the appeal is there that you might be driving it. And it seems more real and accessible. And did I mention that it's more accessible in the US since all the tracks but one are in the US?
